Learn to make delicious, ethereally creamy, Israeli style hummus that will put you off the store bought stuff forever. The recipe is extremely simple, but it took me years of trial and error, and a lot of disappointing hummus, to find the exact flavor and texture of the hummus I grew up eating, visiting my father's family in Israel. In this class, I will share the secrets I've learned from Israeli cooks and restaurateurs. Nothing makes me happier than introducing people to what truly delicious middle eastern hummus is supposed to taste like. Say goodbye to dry, chunky hummus forever!

What you need to bring to the experience?

  1. A can of garbanzo beans
  2. Tahini. One of the secrets to excellent hummus is the brand of tahini - it's very important. Honestly, the ones you always see at traditional grocery stores aren't going to give you a good flavor.
  3. A few cloves of garlic
  4. A lemon or two
  5. Salt
  6. 1/2 t cumin
  7. Olive oil for serving (use your best stuff!)
  8. A Vitamix or other high powered blender, ideally. But if you don't have one, a food processor or blender.
  9. A serving bowl, spatula, spoon and knife
  10. Good quality pita for serving - if you are in Seattle, I highly recommend buying some from Aviv restaurants. It is fluffy, moist and better than any you can buy in a store. Otherwise, flat bread, a baguette, vegatables. Whatever you like to dip into hummus.
